Hal's (Jack Black) father told Hal to find a beautiful woman to marry when he was dying, and Hal was only a kid at that time. Because Hal himself was not handsome, he had trouble finding his dream date. On the other hand, his friend Mauricio (Jason Alexander) had got a gorgeous date, but he, as he put, was not satisfied with the woman. When Hal was stuck in an elevator with a self-help guru Tony Robbins (Tony Robbins as himself), he was transformed into a person who saw inner beauty from the outside. She met a nice but huge (300 pound) woman Rosemary (Gwenyth Paltrow), who just happened to be his boss's boss's daughter, and fell in love with her. Mauricio thought he was losing a friend and so he asked Tony to bring Hal back to "normal". Soon Hal found that Rosemary was different, but his love toward her remained. Rosemary, thinking Hal was going to leave her, was planning to do another mission for Peace Corp. Hal had to decide quickly what to do.
As you might have guessed, Hal and Rosemary got together at the end. Maybe you think the screenwriter wanted to convince people to love people's inner beauty instead of their skin-deep beauty in appearance. I would doubt it because the screenwriter did make fun of Rosemary as a clumsy obese woman. It would be too foolish (or too shallow in an non-shallow way) to convince people to believe in that "ideal", especially when Rosemary was so far away from what we would consider good looking. I think the idea that the screenwriter wanted to bring out is that the "unwanted" should not feel bad about themselves just because other people do not fall in love with them as a result of their non-beauty. They should feel good about themselves if they are good in their hearts. Maybe they will not find love, but some people would appreciate their inner beauty and they would still make friends who have the same objectives in life. More important, I think, is as in the speech that Tony Robbins gave when Mauricio was asking him to bring Hal back to normal: We are taught to see things in a certain way, and we continue to see things the same way. Maybe we should not, at least not always…
All in all, "Shallow Hal" is more than a comedy. Not every person will like it, but those who like to think about the meaning of a film would find it much more than being a shallow film.
